This is a space for food research and innovation focusing on its two aspects, the culinary and the technical, with the objective of materialising ideas in the field in a fluid and creative way. Therefore, the experiential factor plays an important role, both functionally and aesthetically.

De Dietrich (an avant-garde home appliance manufacturer), Mugaritz (one of the world’s most prestigious restaurants) and Azti (a technology centre, expert in marine and food innovation) offer in this environment different innovations such as a voice-activated automated kitchen, a streaming broadcast of the classes given, a private food hall... All in an enveloping and minimalist environment of Japanese inspiration that has its counterpoint in a large Caravaggio-style painting that portrays the battle between fast food and slow food.
